Chicken, Sweet Potato, & Broccoli

My kid is a yamatarian*. He eats sweet potato with every meal, and when I want to introduce new foods I have to mix them into sweet potatoes. Which, okay, fine. There are worse things! Also, fun fact: the nutrients in sweet potatoes are most easily absorbed when combined with fat! So don’t forget the butter!



Here’s how to make it:

  1. Heat oven to 350F.
  2. Bake two large sweet potatoes for 40-45 minutes, until cooked through.
  3. While your sweet potatoes are baking, cook 1 chicken breast in a skillet with a little butter or olive oil for 5-6 minutes per side, until cooked through.
  4. Once that’s done remove the stems from one head of broccoli and roughly chop. Combine in a pan with 1/2 cup water and a little salt. Cover and simmer for 15 minutes, until cooked.
  5. Peel the sweet potatoes and shred the chicken. Mash together with the broccoli and 1 tsp dried oregano.


*I know sweet potatoes and yams aren’t the same thing, but yamatarian sounds way better than sweet potatarian.
