Red Pepper, Potato, & Bok Choy

This is an easy hash that is great for kids who are ready for texture in their food. Easy to gum for the pre-teethers, but still a step above puree.


Here’s the plan:

  1. Thinly slice and chop 1 red potato1 red bell pepper, and 1 head baby bok choy.
  2. Combine in a skillet with 1 tbsp grassfed butter over medium heat.
  3. Cook, stirring frequently, until everything is cooked through and soft.
  4. Serve as is, or combine with mashed sweet potatoes, refried beans, a fried egg, or avocado.
