Four Ingredient Pancakes

Ev and I share a mutual adoration for pancakes, which makes these quick and easy banana and oat pancakes a big hit. They’re perfect for breakfast or an afternoon snack, and he can easily feed himself. They’re an especially big hit when smeared with a little peanut butter.

Here’s what you do:

  1. Mash together 1 banana1 egg, 1/4 cup oats, and a sprinkle of cinnamon.
  2. Melt 1 tbsp butter in a skillet.
  3. Spoon tablespoon size dollops of batter into the pan. Fry 4-5 minutes per side.
  4. Serve fresh or refrigerate and serve as needed (warm up in oven, toaster oven, or on the stove.)
