As we’ve transitioned to mostly finger foods we’ve taken Ev’s yam habit from mash to baked sweet potato spears. They’re simple, delicious, and he can’t get enough of them.
Here’s what you do:
- Peel sweet potato and slice into 1/2″ thick spears.
- Heat oven to 375F.
- Toss with coconut oil and a pinch of paprika (or chipotle!).
- Roast for 30-35 minutes or until soft.
