Zucchini & Oat Waffles

For Ev’s birthday I bought a present for the family, one I’ve been wanting for a while- a waffle iron. At his birthday dinner we made chicken & waffles and then had leftover waffles with cottage cheese for the next two weeks for breakfast every morning. I decided since waffles were clearly a big hit that I should adapt my oat bread recipe to become waffle maker friendly. And I added zucchini for good measure (and because we have so much from our CSA).

He woke up from his nap today while I was making these, so he taste tested one fresh from the iron. I think it’s fair to say they were a big hit! I’m planning on making a big batch to take with us on vacation next week, and I suspect these will become a regular school morning breakfast (served with peanut butter, eggs, or cottage cheese).

Zucchini & Oat Waffles

2 medium zucchini

1 cup rolled oats

1 cup apple sauce

2 eggs

1 cup whole milk

1/2 cup flour

1 tsp cinnamon

1/2 tsp baking powder

Grate zucchini and mix with remaining ingredients. Heat waffle iron to highest setting. Cook each waffle for 10-12 minutes or until it is brown and easily comes off the iron.
